Stew Peas-a Jamaican food you will always remember
A very popular dish in the homes of Jamaicans. My personal favourite as a child until I decided to stop eating pork. Salt beef can be used by itself for this dish .but not half as tasty as with salt pork and/or pigs tail.
Ingredients
1 pt. red peas
1/2 to 1 lb. salted pig’s tail(cut up)
1/2 lb. salt beef(pickled beef)
1/2 beef stew (cut up) optional
1 whole green scotch bonnet pepper
2 stalks escellion
1 tsp. all purpose seasoning.
sprig thyme
2 cups coconut milk(optional)
salt and pepper to taste
spinners (recipe below)
pimento seeds (some crushed)
Method:
1)Soakpeas in water to soften (overnight is best)
2)Soak salted meat in lots of cold water to get rid of salt(overnight is best)
3)Place the meat and peas together in a large saucepan with enough water to cover (add the coconut milk here if desired)Simmer about 2 hours or until soft.
4)Add thyme,escellion ,pimento seeds,scotch bonnet pepper,all purpose seasoning and spinners
5) Taste for seasoning and correct if needed.Cook for app.30 minutes more to blend taste and crush some of the peas while stirring to make stew thicker.
Serve with white rice and you will surely have a crowd pleaser every time.
Spinners(small dumplings)
1 cup flour
pinch salt
1)enough water to make a stiff dough.
2)mix ingredients together to make a stiff dough
3)pinch 1/2 oz. of dough,knead and shape in palm of hands into a long fairly thin dumpling. Allow
to stew for about 15 min.
