CURRIED GOAT-a Jamaican food for all occasion
This is one of Jamaica’s main dish. This is served at most parties,weddings and gatherings.Curried goat is a Dish that is cooked by Jamaicans all over the world. It brings back the festive feeling of home and happy times.
RECIPE
INGREDIENTS
3 LB —————— GOAT MEAT( CUT IN SMALL PIECES)
3-4 TBSP————— CURRY
1 TBSP —————–MASALA POWDER (OPTIONAL)
1 TBSP —————–ADOBO ALL PURPOSE SEASONING (GOYA)
6 CLOVES —————GARLIC (CRUSHED)
2 MED——————-ONIONS (CUT UP)
SALT TO TASTE.
1 ———————-SCOTCH BONNET PEPPER (CUT UP)
APPROXIMATELY———–12 PIMENTO SEEDS (CRUSHED)
3 MED SIZED ————IRISH POTATO(DICES)
3 MED. SIZED————CARROTS (CUT UP)METHOD:
SEASON MEAT WITH CURRY POWDER,MASALA POWDER,ADOBO SEASONING AND SALT.LEAVE FOR A FEW HOURS OR OVERNIGHT.POUR A LITTLE OIL IN A SKILLET OR DEEP PAN, THEN ADD GARLIC,ONIONS,SCOTCH BONNET PEPPER AND PIMENTO SEEDS. STIR UNTIL ONIONS ARE CARAMELIZED,THEN POUR INTO A SMALL BOWL AND PUT ASIDE.
ADD A LITTLE MORE OIL TO THE PAN AND ALLOW TO HEAT.ADD MEAT THEN STIR FRY(DO NOT BROWN)
ADD APPROXIMATELY TWO CUPS OF WATER AND THE CARAMELIZED ONION MIXTURE TO MEAT,COVER POT AND COOK FOR APPROXIMATELY 40 MINUTES.
ADD CARROTS AND POTATOES AND A LITTLE MORE WATER (IF NEEDED) COOK UNTIL MEAT IS TENDER AND CARROTS CRUSHED OUT TO MAKE A DELICIOUS GRAVY.
ENJOY WITH WHITE RICE OR RICE AND PEAS.
