  • Curried Chicken

    Curry is the main ingredient in this dish which is a subtle blend of spices which greatly determines the taste of the dish.It is a good idea to experiment with different blends of curry.Masala is an Indian blend that gives a great taste when added to curry dishes.

     

    1 whole chicken 3-4 lbs.(cut up in 1  1/2 to 2 inches serving sizes)

    2 limes

    3 cloves garlic(minced)

    2 stalks escallion(cut up)

    1/4 ” root ginger(beaten and cut up)

    2 tbsp. curry powder

    1 tbsp. masala powder

    1tbsp. all purpose seasoning

    10 seeds pimento(crushed)

    1 tsp. sugar

    2tsp. salt

    3 tbsp. oil

    2 cups water

    3 med. potatoes (cut small)

    2 med onions (chopped)

    1 scotch bonnet pepper (cut up)

    Method

    1)Wash chicken in lime juice and rinse properly.

    2)Mix curry powder,masala powder,sugar,salt,all purpose seasoning.Rub on chicken, leave at least one hour.

    3) put onions,scotch bonnet pepper,ginger,garlic in skillet with a little oil to stir fry.When onion mix is lightly carmelized ,take off stove and put aside.

    3) Brown chicken in oil. Keep turning until curry is cooked.Add two cups of water,escallion,all purpose seasoning and onion mixture to chicken , leave to cook for app.15 min. then add potatoes  Let chicken cook for another 15 min.or until gravey is nicely formed.

     

    Enjoy with white rice or rice and peas.
