Escoveitched Fish -great Jamaican food
2lbs. Fish
1/4 cup flour
oil for frying
Escoveitch sauce
1 cup vinegar
pinch of salt
1 tsp. fish seasoning
1 cup strips of carrots
1 cup strips of sweet pepper (optional)
2-3 med. onions(cut into onion rings)
2 scotch bonnet peppers(or enough for taste)
6 pimento grains(optional)
METHOD
After fish is cleaned up and dried with paper towel
1) add fish seasoning and salt to flour and lightly dust fish.
2)Fry fish in 1/2 inch deep oil.
3)As soon as fish is opaque,fish is ready. Set aside.
4)Stir fry onions,scotch bonnet peppers,sweet pepper,pimento for one min.
5)Add in vinegar to onions and simmer for about half a minute.
6)Pour vinegar mixture over fish .
Best if eaten after one day of soaking.Do not refrigerate.
Escoveitched fish is ideal with Bammy ,however is just as good with rice,festival or bread.
