Jamaican food-Cow foot
INGREDIENTS
3 lb. cow foot.
3 qt. water
pinch of salt
2 stalks escellion
2 cloves garlic
sprigs of thyme
black pepper to taste
3 small carrots (cut up)
1 scotch bonnet pepper
1 can butter beans
Method:
1)Chop cow foot in 3 inch. pieces.
2)Add to 3 qt. water with a pinch of salt.Cook in pressure cooker approximately 40 min.or until soft.
3)Remove cowfoot from liquid and place cow foot and two cups of the liquid in saucepan to make
stew.
4)set aside the remaining portion to make jelly.
5)Add seasoning and carrots to stew and allow to cook slowly for app.25 min.
6)Add butter beans and cook for another 10 min.
Serve hot with plain rice or rice and peas.
